wow, that thing about the eggplant?
If you’re my age or older, I’m sure you’ll remember that old people used to say there’s no nutrients in eggplants because it’s just water and some fibers. Turns out that’s just some urban legend and totally untrue.Today I cooked tofu and eggplant stir-fry for lunch and thought that I’d do a little research about eggplants. Here’s a part of what I learned:
Eggplant is a nutrient dense food containing dietary fiber, manganese, potassium, vitamin b6, folate, niacin, copper and thiamine, as well as other phytonutrients. It’s very low in calories so it’s good for people who want to lose weight. Its skin contains a phytonutrient called nasunin which is a potent antioxidant and helps protect the lipids in our cells responsible for keeping out free radicals.
